Immune Boosting Lemon Ginger Chicken Soup

If you are like me, winter time consists of soup for dinner at least two nights a week! It is cold and there is just something about having a cozy bowl of soup with a sourdough grilled cheese! This Lemon Ginger Chicken Soup is not only delicious but also contains loads of immune boosting ingredients to help you fight off that winter cold.

Immune Boosting Ingredients

Lemon: Lemon is full of vitamin C that can help boost the immune system.

Ginger: Ginger has been known to stimulate white blood cell production which is key in fighting off infections in the body. Ginger also has antimicrobial properties which helps the body rid itself of bacteria and viruses. You can see all the benefits on our blog post here.

Turmeric: Turmeric is known for its anti-inflammatory properties which play a big role in immune health. It is also full of antioxidents

Carrots, Onion, Celery: Also known as a mirepoix, this healthy trio is full of vitamins and nutrients that help our bodies fight off all kinds of sickness.

How to Make Lemon Ginger Chicken Soup

To make this delicious lemon ginger chicken soup you will start by cooking the chicken. I do this in the Ninja Foodie but you can also cook it in the oven. Once the chicken is cooked, shred and set aside.

Next you will chop up all the vegetables and herbs and juice the lemon.

Once all the chopping is complete, heat the olive oil in a dutch oven over medium heat and add the carrots, onion, and celery. Cook them for 7-10 minutes or until tender. Next add the garlic and ginger and cook for an additional 1-2 minutes. Now add in the rosemary, turmeric, and cayenne and mix well.

Now add the chicken bone broth or chicken broth and scrap the bottom of the pan. Add in the rice and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for 20 minutes, or until the rice is cooked through.

About 5 minutes before the rice is finished cooking, add the chicken to the pot so that it can warm up and absorb some of the flavors.

Finish the soup off with the fresh lemon juice and a little more salt and pepper if needed.

Ingredients
  

  • 2-3 shredded chicken breast
  • 1 Tbsp Olive oil
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrot, chopped
  • 3 cloves garlic, minced
  • 1 Tbsp ginger, minced
  • 1/2 Tbsp rosemary, chopped
  • 1 tsp ground turmeric
  • 1/8 tsp cayenne (or more for more spice)
  • 6 cups chicken bone broth or chicken broth
  • 1 cup rice (arborio or jasmine work well)
  • 1 lemon juiced
  • 1 tsp salt
  • 1 tsp pepper

Instructions
 

  • Cook the chicken and shred. This can be done in the oven or instant pot.
  • Add olive oil to dutch oven and heat over medium heat.
  • Add carrots, onion, and celery and let cook for 7-10 minutes.
  • Add minced garlic and ginger and cook for an additional 1-2 minutes.
  • Add in rosemary, turmeric, cayenne, and salt and pepper. Mix well.
  • Add chicken stock and scrap the bottom of the pan.
  • Add rice, bring to a boil, reduce to simmer and cook for 20 minutes (or until rice is cooked through).
  • With about 5 minutes to go on the rice, add in the chicken.
  • Once the rice is cooked add in lemon juice and more salt and pepper if needed.
